Pineapple & Coconut Panna Cotta

Ingredients (Serves 4-6)
400 ml coconut milk
200 ml cream
80 g sugar
2 tsp powdered gelatin (or agar-agar for vegetarian option)
3 tbsp cold water
1 cup pineapple, diced
1 tbsp brown sugar
1 tbsp lime juice
2 tbsp toasted coconut flakes
Method
In a small bowl, bloom gelatin in cold water for 5 minutes.
Heat coconut milk, cream, and sugar in a saucepan until just simmering.
Remove from heat, stir in the gelatin until fully dissolved.
Pour into ramekins or glasses and chill for 4–6 hours until set.
In a pan, sauté diced pineapple with brown sugar and lime juice until syrupy; let cool.
Spoon pineapple compote over the panna cotta and sprinkle toasted coconut flakes before serving.
Serving Suggestion
For a restaurant-style finish, top with a thin pineapple crisp or candied lime peel. Serve with a chilled dessert wine or coconut-infused espresso for a tropical twist.
