Pineapple & Coconut Panna Cotta ingredients

Ingredients (Serves 4-6)


  • 400 ml coconut milk

  • 200 ml cream

  • 80 g sugar

  • 2 tsp powdered gelatin (or agar-agar for vegetarian option)

  • 3 tbsp cold water

  • 1 cup pineapple, diced

  • 1 tbsp brown sugar

  • 1 tbsp lime juice

  • 2 tbsp toasted coconut flakes


Method


  1. In a small bowl, bloom gelatin in cold water for 5 minutes.

  2. Heat coconut milk, cream, and sugar in a saucepan until just simmering.

  3. Remove from heat, stir in the gelatin until fully dissolved.

  4. Pour into ramekins or glasses and chill for 4–6 hours until set.

  5. In a pan, sauté diced pineapple with brown sugar and lime juice until syrupy; let cool.

  6. Spoon pineapple compote over the panna cotta and sprinkle toasted coconut flakes before serving.


Serving Suggestion

For a restaurant-style finish, top with a thin pineapple crisp or candied lime peel. Serve with a chilled dessert wine or coconut-infused espresso for a tropical twist.
