Passion Fruit Mocktail

Ingredients (Serves 2)
120 ml passion fruit juice (fresh or bottled)
250 ml sparkling water
1 tbsp basil seeds (soaked until gelatinous)
1 tbsp honey or agave syrup (optional)
Ice cubes
Garnish: dried pear slice, cherry, basil leaves
Method
Soak basil seeds in water for 10–15 minutes until they swell and become gelatinous.
Fill tall glasses with ice cubes and spoon in the soaked basil seeds.
Pour in the sparkling water first, then slowly top with passion fruit juice to create a layered effect.
Sweeten with honey or agave syrup if desired.
Garnish with a dried pear slice, cherry, and fresh basil leaves.
Serve immediately and enjoy the tropical aroma.
Serving Suggestion
For an elevated presentation, rim your glass with crushed dried basil or edible gold dust. Pair with light canapés or fruit tarts during a sunset gathering.
